Easy Fixins


The hubby and I eat at home most nights, and believe me not every night’s dinner is a big production.   Sometimes it’s a matter of looking in the pantry and refrigerator, seeing what’s there and making something of it. 

pasta sauceSo it was with this pasta sauce which turned out to be very flavorful and part of a most satisfying meal.  Best of all, it was a quick fix which is always a good thing when it comes to spending time in the kitchen.

Sausage/Tomato Pasta Sauce

1 lb. sausage cut into 1″ pieces*

28 oz. can diced tomatoes

1 8 oz. can tomato sauce

1 onion finely chopped

3 cloves minced garlic

1 T. olive oil

1 T. Italian seasoning or any aromatic spice

salt and pepper to taste

1 c. fresh or frozen green peas

1/2 c. vodka (optional) 

1/2 c. cream (optional)

*Any of the delicious Italian or packaged turkey/chicken sausages will work for this dish.

Saute sausage, onion and garlic in olive oil until onion is softened and sausage is lightly browned.  Add tomatoes, tomato sauce, seasonings, salt and pepper.  Cook over medium heat for 15-20 minutes.  Add peas and cook an additonal 5 minutes.  If desired, add vodka and cream at this point.  

Serve over your favorite pasta and sprinkle with Parmesan cheese.  Accompany with a crisp green salad and crusty Italian bread, and there you have easy fixins!

  1. I’m going to try this with shrimp instead of the Italian sausage and see what happens. I recall eating something called Shrimp in Vodka Cream Sauce about 10 years ago and loving it. Haven’t had it since. This sounds like what was in it. Thanks, Linda!

  2. I like the vodka part. The recipe is so easy even I can do it!!! Blizzard tonight. 4-6 inches of snow this AM. Trying to stay warm. Love to you both my valentine.

  4. Chef Emeril uses garlic and onion in dishes but Chef Mario says use one or the other as flavors combat each other. I use garlic and rarely onion because I think garlic flavors but onion over powers natural taste of food. Sugar/garlic veggies are a delight for me.
